Brie and gouda are great for sandwiches and are probably amongst my overall favorites.
I usually eat Danish blue cheese, feta, or mozzarella with salads, and I also really enjoy slices of mozzerella served on tomatoes with basil and olive oil.
I may try out on making my own cheese someday as I usually buy them from the grocery store.
