IDK why they like it. If I had an idea I wouldn't be wondering why they do.
I'll list some quick reasons why people like it:
1: The character designs are all very varied, charming and all share this quirky and cutesy asthetic to them, making them distingushable and memorable common traits include long hair, horns, tails, black-claw-hands, and having no neck. They are also super easy to draw.
2: The basic plot of FPE makes it a great platform to build fanmade AU's (alternate universes) off of, the plot isn't very deep but since that makes it open to lots of interpretations it means that the possibilites are endless for how the story can be changed. There are even easter eggs and details in the characters themselves that give plain background characters like Ruby and Miss Grace more in the way of character than you would think.
The points above may not be very quanitiative, but they have a lot of value, this shows that FPE is more than just a 4 minute AMV, it's a platform for creative minds, and Kaite giving up on FPE solidfies my arguement.

I missed this somehow, so I guess it's just one of those things where people only really like it for the fandom?

Essentially yes, while people do appreciate the OG material, they really do mostly love it for the fandom, one noteable example being the extensive amount of headcanons given to the characters.
